James Shipley is a Chef, Chocolatier, and Wilton Instructor with enthusiasm for international cuisine and for his Native American roots. Chef James was influenced by his grandmother Genevieve, a lifelong Chef in the logging heydays of the Minnesota Northwoods.
Chef James has studied at Le Cordon Bleu and at Ecole Chocolat. Chef James has worked at restaurants such as 20/21 and The Good Earth, and he has owned several restaurants in Ohio.
Chef James' personal philosophy for food is to let the ingredients speak, so he designs recipes which highlight the natural greatness in each item.
Chef James' A Beginners Guide cookbook series is designed for anyone to create amazing food. Step-by-step directions are just the start. Chef James honed his teaching skills for beginning cooks during his work as a working Chef in Minnesota and Ohio, as a teacher offering beginner classes at a local community center in Minnesota, as a school teacher for a vocational class at a public high schools in South Dakota, and as a mentor coach for a vocational high school competition team in Ohio.
